Ingredients
(Makes one 9×5-inch loaf, 10–12 generous slices)
The Apple Heart:
• 2 medium Honeycrisp or Granny Smith apples (about 1½ cups diced)
→ Why these? Honeycrisp stays tender-sweet; Granny Smith offers tart contrast—both hold shape without turning to mush
• 2 tbsp granulated sugar
• 1 tsp ground cinnamon (Ceylon for floral notes, Cassia for bold warmth)
The Spiced Batter:
• 1½ cups (190g) all-purpose flour, spooned & leveled
• ¾ cup (150g) granulated sugar
• 2 tsp baking powder
• ¼ tsp fine sea salt
• ⅓ cup (80ml) neutral oil (avocado or canola) or melted unsalted butter, cooled
→ Why oil? Creates moister crumb than butter alone—ideal for sliceable loaf texture
• 2 large eggs, room temperature
• ½ cup (120ml) whole milk, room temperature
• 1 tsp pure vanilla extract
The Cinnamon Swirl:
• ⅓ cup (70g) packed light brown sugar
• 1 tsp ground cinnamon
The Vanilla Glaze (Essential Finish):
• ½ cup (60g) confectioners’ sugar, sifted
• 1–2 tbsp whole milk
• ¼ tsp pure vanilla extract
• Pinch of fine sea salt (enhances sweetness—don’t skip)
